When dealing roulette, it's very important for the dealer to keep their body square with the table.
This means that the bank roll must always be in view and in order to accomplish that, the dealer must pay the player their chips without turning their back to the bankroll. If the dealer pays the winnings with one hand then he can keep his body square to the game and the bankroll in sight. If the dealer uses two hand to pay the player then this forces him to turn his back on the bankroll leaving it vulnerable.
